Butterscotch Cashew Scotchies

I made this recipe yesterday. We were going to a party, so I thought it'd be fun to make something to take, and these turned out to be extremely easy to make and very yummy!! This is from my "The Cake Mix Doctor" cookbook.

Butterscotch Cashew Scotchies

Makes 24 bars.
Preparation Time - 10 minutes
Baking Time - 27-29 minutes

1 package (18.25 oz) plain yellow cake mix
1/4 cup packed light brown sugar
8 tablespoons (1 stick) melted butter
2 large eggs
1 teaspoon pure vanilla extract
1 cup chopped lightly salted cashews
1 cup butterscotch chips

1. Place a rack in the center of the oven and preheat the oven to 350. Set aside an ungreased 13x9" baking pan

2. Place the cake mix, brown sugar, melted butter, eggs, and vanilla in a large mixing bowl. Blend with an electric mixer on low speed for 1 minute. Stop the bowl with a rubber spatula. Blend again on low speed for 1 minute. Transfer the batter to the pan, smoothing it out with the rubber spatula so that it reaches all sides. Sprinkle the cashew pieces and butterscotch chips over the batter. Place the pan in the oven.

3. Bake the cake until it is golden brown and a toothpick inserted in the center comes out clean, 27 to 29 minutes. Remove the pan from the oven and place it on a wire rack to cool for 30 minutes.

4. Cut the cake into 24 bars. Remove the bars from the pan with a metal spatula, and serve.

I've also now "halved" this recipe.and made in an 8x8" pan. Perfect for a small gathering when you don't want leftovers.
