Beef Taco Mac

Last night I tried this recipe. It was very good. I might try it with chicken next time, as I can think of lots of better way to eat steak... like as just a plain old steak :) But it was good and Chad really liked it... another one of those dishes he knew he would like, because he liked all the ingredients separately.

Beef Taco Mac
(I found this on simondelivers.com)

1 lb Beef Steaks, cubed
1 tbsp vegetable oil (I used olive oil)
1 med onion, chopped
1 pkg taco seasoning mix
2 cans (14 1/2 oz - 16 oz each) diced tomatoes, undrained
1 1/2 cup rotini (spiral) pasta, uncooked (I used whole wheat)
1/4 tsp salt
1/2 cup water
1/2 cup cheddar cheese, shredded

1. Cut beef steaks lengthwise into 1" wide strips and the crosswise into 1" pieces.
2. In a dutch oven or large pot, heat oil over medium-high heat until hot. Add beef and onion; cook for 3 minutes, stir occasionally.
3. Stir in salt, taco seasoning, tomatoes, pasta, and water; bring to a boil. Reduce heat to low; cover tightly and simmer for 20 minutes or until pasta is tender. Sprinkle with cheese before serving.

You could use round steak for this. It's cheaper and a less tender cut, but this sounds like it is cooked long enough that that wouldn't be a problem.
