grilled meatball kebabs

I'm back at cooking and trying some new recipes. I actually tried one last week and didn't post it, because we only ate about 3 bites before throwing it out and heading to Culver's... no need to share something like that!

Tonight I made Grilled Meatball Kebabs (not sure if that is the normal spelling) but that's how the WeightWatchers.com site spelled it!

They were really good and easy to make!

Grilled Meatball Kebabs

1/2 cup dried bread crumbs
1/4 cup 1% low-fat milk (I used skim, and would maybe use a bit more next time)
1 pound raw lean ground beef
3/4 oz romano cheese, grated (about 1/4 cup, I used Parmesan)
2 large egg white(s)
2 medium garlic clove(s), coarsely chopped
2 tsp dried parsley
2 tsp dried oregano
1/2 tsp table salt
1/2 tsp black pepper
1 medium sweet red pepper(s), cut into sixteen chunks
1 medium onion(s), cut into sixteen 1-inch pieces

1. Soak eight 10-inch skewers in water to prevent them from burning on grill.
2. In small bowl, mix bread crumbs and milk; set aside 5 minutes. Heat grill.
3. In food processor, combine beef, cheese, egg whites, garlic, herbs, salt and pepper. Strain bread crumbs and squeeze lightly to extract excess milk. Add to beef mixture and process just until blended.*
4. With moistened hands, shape mixture into 16 meatballs, about 2 inches in diameter. Holding two skewers at a time, alternately thread 4 chunks of red pepper, 4 chunks of onion and 4 meatballs onto parallel skewers, beginning with pepper. Repeat with remaining skewers.
5. On lightly oiled grill, cook kebabs for 8 to 10 minutes, rotating about every 2 minutes to cook evenly. Meatballs should be just cooked through, but not overcooked.

*When I make this again, I will not even bother with the food processor, and just mix it with my hands as I do for normal meatballs, maybe my food processor is smaller than others, but it just didn't work for me.

vacuum repair

Tonight I tried to vacuum with both of our vacuums... I ended up taking both apart and both have broken belts. So I hope Target sells belts, because we really need to vacuum our carpets!

Formal Wear

So I'm anticipating the Awesome 80s Prom. Just got tickets this weekend, and there was that box of prom and bridesmaid dresses that hadn't been unpacked. So we just had a fashion show!

The cool part is that the ones from high school fit! (although the green velvet one, my favorite, was a little tight) And the ones from post high school were all too big. So now I know I will really never wear those bridesmaid dresses again!

If any of you need to borrow formal wear let me know. I have more than I know what to do with. I would love it if my mom would make a quilt out of them (hint hint, Mom!) but that will definitely have to wait until after I go to the Awesome 80s Prom next month!

Babyville

First off, I'd like to say that this book was recommended and loaned to my by a friend, and I did not pick it out myself, so do not think my reading it is the result of my internal clock or any plans Chad and I may or may not have!!!

Now that I got my disclaimer out of the way :) ...



I just finished Babyville, by Jane Green. This is the 3rd book I've read by her this year. And another good, very enjoyable book! The book is about 3 woman, who are all connected in some way who all are experiencing life trying to conceive, being unexpectedly pregnant, and unexpectedly not enjoying motherhood as much as imagined. Good book. Well written, it was light and funny.

I'm back to one book at a time!

Maintenance

I have managed to maintain (not go 2 lbs over my goal) my weight for 5 weeks now. 1 more week and I'm a lifetime member which means as long as I am maintaining, then I don't have to pay for another meeting...

I think if I can get through these last few weeks of moving and everything else that has been going on that I'm doing pretty good, but I also need to watch it, because I probably burned a lot of calories moving and packing/unpacking. We'll see... I want to decide before next week how I intend to hold myself accountable going forward.

Good Bye Baked Chips

Lays has a new line of Light Chips. The Nacho Cheese Doritos are the best! Taste just like real Doritos... No more baked chips when I can have these! Doritos are my favorite... I never liked the baked ones, but these are awesome! And like 6 grams less fat per serving!

Also the Tostito Light chips are really good. They wouldn't survive a taste test, but they are good, and kick the a$$ of any baked tortilla chips.

Kitchen Attack!

Tonight, I am going to go full force on the kitchen. Chad is having dinner in the Coon Rapids area with his buddy/pal/amigo. So I am going to just get my kitchen clean... I'm concentrating one room at a time. Last weekend was the bedroom. Now the kitchen, and then there is the amusement room and garage which between the two holds everything that didn't quite belong anywhere else...

Movie Review

Chad and I went and saw Wedding Crashers on Saturday night. Very funny. Pretty predictable, could have been funnier, but still very funny! There is a small appearance by a very funny actor, shall not reveal who that is in case you have not heard.

Still the premise that these guys love movies and go out to wedding after wedding to have fun and hook up with women is pretty funny!



We went to the Lakeville Theatre which is 10 miles from us, but a straight shot down 35, so super easy to get to. And they had caffeine free Diet Coke, which is great, because I never get pop at the movies, because I don't want to be up all night... :)

We also watched In Good Company on PPV on Friday night. It was good. Exactly what I thought it would be. Always a bit of a disappointment when you know the story based on the previews... It's one thing when it's laugh after laugh, but this was just a feel good story. Not a bust a gut comedy or anything like that...

We are getting NetFlix, since we now live in the Suburbs, so my movie watching should increase!

Our Porch

Our screened porch is the first room that is all set up like we like it and without boxes! Unfortunately this past week it's been a little too hot to enjoy!

We bought a new table and chairs at Pier 1 this weekend. Here are some pictures:




And I have a spice garden: parsley, basil, and chives.

The parsley got a little overheated this week, but hopefully it'll bounce back...

Water Hog

Today is my first official laundry day, and in the sweltering heat we are watering our lawn... Our first water bill should be fun :)

Drained

Today I went back to work. And once there, I realized how drained I was. With the move and funeral and everything else going on, I hadn't had any time to just sit and relax, let alone had much time to really think about losing my grandma. I took off early afternoon, and will work from home tomorrow after our closing. I just needed some time to do things that I need/want to do. I ran some errands, and then made some tacos for dinner and got in some 90210 on TiVo. It was nice to be cooking again. Hopefully life will get back to "normal" and I'll be trying some new recipes again soon!

Fourplay



I just finished reading Fourplay, by Jane Moore, as a recommendation from Kyra.

It was really good. More chick lit. Chick lit has been great with my busy schedule, it's quick and easy to read. This book was about a woman (a thirtysomething mother of two) who's husband leaves her for a younger woman, "the cliche". She goes on to find that she really has a lot of options, that her marriage had been stalled and she went on to re-discover herself with the help of 4 men who are interested in her.

Good book!

Lots Going On

Sorry I haven't kept up. I have been crazily busy the last week. Something everyday and that something has not been much unpacking. Plus we were offline for about 3-4 days while Comcast got their act together.

Thursday I spent most of the day getting last minute things packed up. My brother helped us move the tv and other electronics. Friday the movers came. Less than 3 hours later they had left our new house. It was worth every penny to not have to move those hide-a-beds!

Saturday we spent a very warm but nice afternoon in St. Anthony at a wedding reception/barbecue. We left soon after Chad attempted a keg stand! :)

Sunday I went to Oronoco for my friend Kris' baby shower. It was so nice to see her and our other friends from Stout. So many math majors in one room!

Yesterday and today, we are spending with my whole family, as my grandma passed away last week. She was 88 and had lived a long full life. She had been in and out of the hospital the last month with "cloudy lungs". She had been ready to go long ago, and I'm sure is happy to be with my grandpa finally. It's really sad, because we all have so many happy memories of her, but she had been ready for a very long time. In fact, before I got married she didn't think she'd be around for that. I'm just so glad I got to spend the afternoon with her a few weeks ago when she was in the hospital. She was a great lady.

Improvements...

Yes! We are almost ready to move. We do need to get the garage cleaned out more. Drain the gas from the lawn mower and snowblower, and pack up a few more boxes. Plus I am trying like a bandit to get rugs and blankets and stuff like that clean, because our washer/dryer rock, and the our new ones in Burnsville, not so much. We haven't even tried them yet, but they are not nearly as new (or nice) as our current ones, which we LOVE and will miss, but believe you me, that is all I will miss!

I will not miss:
  • that half of my kitchen is boxes in the basement
  • leaving my car to sit outside in cold and hail
  • getting out of the car to open the garage door
  • the LOUD air conditioner
  • B96 blaring from the cars in the apartment behind us
  • 8 old cars parked in the neighbors driveway
  • kids throwing litter in my yard when I'm standing right there
  • the garbage disposal that spits water back at you.
  • etc., etc., etc.

Eh??

New House!


We're finally In!

Yesterday was the first day we could finally get in the new house! So exciting!

We actually got a bunch of stuff moved. Chad's parents helped us. I think between the 4 of us we took 11 carloads of stuff, which is pretty impressive considering the traffic on 35W the Friday before a long weekend!
